Strawberry Shortcake Scones Recipe

Ingredients

  • 1 ½ ups self-rising flour
  • 30g butter at room temperature
  • 2 tablespoons plus 1 tablespoon caster sugar
  • 1 egg
  • ½ cup milk
  • Strawberries and whipped cream (for serving)

How to Make Strawberry Shortcake Scones

  1. Preheat your oven to 210 degrees Celsius and prepare a baking sheet by greasing with butter or oil.
  2. Sift flour into a mixing bowl.
  3. In a separate bowl, beat together first 2 tablespoons of sugar and butter until mixture is light and fluffy.
  4. Add egg to butter and sugar mixture.
  5. Make a small depression in the middle of the flour. Add the egg, butter, sugar mixture.
  6. Add milk to depression as well.
  7. Mix all ingredients with a flat knife until a soft dough forms.
  8. Turn dough out onto a lightly floured surface and knead briefly until smooth.
  9. Roll out the dough to form a 2cm thick round.
  10. Cut the dough into individual scones approximately 5cm in diameter.
  11. Place scones on baking sheet and glaze with milk. Sprinkle scones with extra sugar.
  12. Bake 10-12 minutes or until scones are golden brown.
  13. Serve warm with whipped cream and strawberries.
