Raspberry Scones Recipe

Ingredients

  • 2 cups self-rising flour (make your own self raising flour)
  • 30g (1oz) butter (melted)
  • 2 tablespoons plus 1 tablespoon caster sugar
  • ⅓ cup water
  • ½ cup milk
  • 1 tablespoon raspberry jam

How to Make Raspberry Scones

  1. Preheat your oven to 210 degrees Celsius and prepare a baking sheet by greasing with butter or oil.
  2. Sift flour into a mixing bowl.
  3. Add first 2 tablespoons of sugar.
  4. In a separate bowl, combine butter, milk, and water.
  5. Make a small depression in the middle of the flour. Add the liquid mixture.
  6. Mix all ingredients with a flat knife until a soft dough forms.
  7. Turn dough out onto a lightly floured surface and knead briefly until smooth.
  8. Roll out the dough to form a 2cm (1inch) thick round.
  9. Cut the dough into individual scones approximately 7cm in diameter.
  10. Flip over scones and make a small depression in the center of each. Add ½ teaspoon of jam to each scone and fold dough in half. Flatten tops slightly to keep jam in place
  11. Place scones on baking sheet and glaze with milk. Sprinkle scones with extra sugar.
  12. Bake 10-12 minutes or until scones are golden brown.

Secret Scone Tip:

Don't spread the scones apart when baking. Keep them together so they "push" each other as they rise.
