Pumpkin Scone Recipe

Ingredients

  • 2 ½ cups self-rising flour
  • 30g butter at room temperature
  • 2 tablespoons caster sugar
  • ½ cup mashed, cooked pumpkin
  • 1 egg
  • ½ cup milk

How to Make Pumpkin Scones

  1. Preheat your oven to 210 degrees Celsius and prepare a baking sheet by greasing with butter or oil.
  2. Chop butter into small pieces.
  3. Add sugar to butter and beat with an electric mixer.
  4. Lightly beat the egg and add to the butter mixture.
  5. Mix in pumpkin and milk.
  6. In a separate bowl, sift flour and create a small depression in center of bowl.
  7. Add liquid mixture and beat lightly with a flat knife until dough is soft and slightly moist.
  8. Knead dough briefly and roll out to form a 2cm thick round.
  9. Cut the dough into individual scones approximately 5cm in diameter.
  10. Place scones on baking sheet and glaze with milk.
  11. Bake 10-12 minutes or until scones are golden brown.
