Jams for Scones
Scones can be enjoyed just by themselves, but topping them with jams
and butters will make them even more delectably satisfying. In fact, a
thick layer of some spread is traditionally added to scones during
teatime gatherings.
Of course, you can buy packaged jams almost anywhere, but homemade
scones deserve better treatment. Here are a few simple options for
making your own jams and butters right at home.
Apricot-Liqeur Jam
For this simple treat, combine 1 cup of regular apricot jam with 1
tablespoon of Grand Mariner. Add 1 teaspoon of freshly grated orange
rind and heat it all over low heat. Stir the mixture for about two
minute, and then allow it to cool.
Healthy Jam
For a lighter spread, start with ½ a cup of sugar-free strawberry
preserves. Then, add 1 cup of sliced strawberries and heat both together
on the stove. Bring it to a boil for just a moment, then lower the heat
and let it simmer for 5-7 minutes. When the jam is finished, the berries
should be soft.

Lemon Curd Spread
This homemade treat is well worth the 10-15 minutes of work. Start
with 3 egg yolks and beat them with ¼ cup of sugar. Add 50g of melted
butter, 2 tablespoons of fresh lemon juice, and 2 teaspoons of grated
lemon rind. Keep mixing with a wire wisk until the sugar is completely
dissolved. Then, place your mixing bowl over a pan of simmering water
for 10 minutes. While it heats, stir the mixture constantly until it
thickens.
Almond Jam
Toast ¼ cup of slivered almonds for 5-7 minutes. Then, combine
toasted nuts with fig jam and enjoy.
