Butters Recipes for Scones
These simple recipes will help you prepare delicious, buttery spreads
to add to your scones. These recipes can be stored in the fridge, or
frozen for up to 1 month. Try the delicious citrus orange butter below

Apple Butter
Peel and chop three apples and place them in a pan with 1 tablespoon
lemon juice. Add 50g butter a cook on low heat for 10 minutes. Add 1-2
tablespoons of sugar to sweeten and finish with ½ teaspoon each of
cinnamon and allspice.
Chili Butter
In a food processor, combine 125g butter, 2 small red chilies
(chopped), 2 tablespoons fresh coriander, and ½ teaspoon cumin. Blend
until smooth.
Citrus Orange Butter
For this tangy recipe, blend together 125g butter, ¼ cup honey, 2
teaspoons grated orange rind, 1 tablespoon fresh orange juice, and ½
teaspoon cinnamon.

Herb Butter
Start with 125g of butter at room temperature. Cut the butter into
small pieces and cream it in a food processor. Add 1-2 tablespoons each
of parsley, tarragon, and basil to the processor, as well as 1 garlic
clove (crushed) and 1 teaspoon of lemon juice. Process all ingredients
until smooth.
Mustard Butter
In a food processor, combine 125g butter, 1 tablespoon Dijon mustard,
1 tablespoon French mustard, and 2 tablespoons freshly chopped parsley.
Blend the entire mixture until smooth.

Strawberry Butter
This simple recipe needs only 125g butter, 1 cup chopped
strawberries, and 1 tablespoon of sugar. Blend it all in a food
processor until smooth.
Sun-Dried Tomato Butter
Start with 1/3 cup oil-packed sun-dried tomatoes. Drain the tomatoes
well, and place in a food processor with 125g room temperature butter.
Add 1 teaspoon of lemon juice and blend until smooth.
Nut Butter
Choose 150g of your favorite, unsalted mixed nuts. Then, blend them
in a food processor with 125g butter and 2 teaspoons of orange rind.
Horseradish Butter
In a food processor, blend together 125g butter, 1 tablespoon
horseradish cream, 1 tablespoon of finely chopped chives, and 1 teaspoon
of lemon juice.
Honey Pecan Butter
Roast 1/3 cup pecans for 3 minutes and let them cool. Then, combine
in a food processor with 125g butter and ¼ cup honey. Blend until
smooth.
Rum Date Butter
Chop 250g fresh dates and place them in a pan with 1 tablespoon rum
and 25g butter. Add ¼ cup water and heat for about three minutes,
stirring constantly. The final mixture should have a very smooth
consistency.
