I found this scone recipe in one of those home magazines and it
turned out to be on of the best plain scone recipes I have found. Let me

Superb easily made recipe. No rubbing in expensive butter etc.I added sultanas first soaked - it cleans the storage oil off them, they swell and are less likely to burn. Made a lot of scones with this mix. Dont use a ring cutter, chop them with a knife into squares. Use your oil/egg/milk mix in recipe applied with a clean finger to the finished tops while on the tray so they finish golden. The secret tip to pack them closer on the tray is a winner. Dont use rolling pin - flatten gently with palm of hand on floured bench- try to keep some air in the mix as it says,dont overwork, so why roll ?. Beware 2 cups of milk can be too much - I find about 1 1/2 cups to 4 of SRF is the max - dont forget the oil makes it go a long way. If too sticky, just add a bit more flour. And the oil factor seems to make baking times much less critical - I have gone up to 20 mins ok with fat/thick scones. I used the healthier rape seed oil- very good. Also found a bit of baking powder can help.
Finally and this bit is really important ! - Great recipe to make with my 4 yr old grandaughter - no electric stuff ! just mix with a fork, etc - not even a 4 yr old can kill this recipe ! No even me whose sponge cakes are so light you have to wear steel toe capped boots in case you drop one on your foot.

Secret Scone Tip:
Don't spread the scones apart when baking. Keep them together so they "push"
each other as they rise.
